  • 4 large eggs
  • 2 large lemons, zested and juiced
  • 1 ½ cups fresh raspberries
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine melted butter, granulated sugar, and flour until it resembles wet sand. Press mixture into the bottom of a greased 9×9 inch baking pan.
  3. Bake the crust for 15 minutes, or until lightly golden. Set aside to cool slightly.
  4. In a separate bowl, whisk together the eggs, lemon zest, lemon juice, and powdered sugar until smooth. Gently fold in raspberries.
  5. Pour the filling over the crust and bake for 20-25 minutes until set but slightly jiggles in the center.
  6. Allow the bars to cool completely in the pan, then dust with powdered sugar and cut into squares.
  7. Serve with fresh raspberries and whipped cream, if desired.
