- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 ½ cups all-purpose flour
- 4 large eggs
- 2 large lemons, zested and juiced
- 1 ½ cups fresh raspberries
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine melted butter, granulated sugar, and flour until it resembles wet sand. Press mixture into the bottom of a greased 9×9 inch baking pan.
- Bake the crust for 15 minutes, or until lightly golden. Set aside to cool slightly.
- In a separate bowl, whisk together the eggs, lemon zest, lemon juice, and powdered sugar until smooth. Gently fold in raspberries.
- Pour the filling over the crust and bake for 20-25 minutes until set but slightly jiggles in the center.
- Allow the bars to cool completely in the pan, then dust with powdered sugar and cut into squares.
- Serve with fresh raspberries and whipped cream, if desired.
